Ah April, a time where our noses fill with the smell of burning charcoal marking the beginning of spring. For us, spring doesn’t begin until the first crack of the bat on opening day of a new baseball season. See, baseball is huge in the Caribbean, specifically in Cuba, the Dominican Republic… and of course, Puerto Rico. Major League Baseball has had over 250 players born in Puerto Rico, many with hall of fame careers but all of them cheered on by their people with great pride. Needless to say, we love this sport.
We often like to sit around and watch games and drink a couple beers, but more often than not, we’re munching on something delicious. If it’s not our fabulous empanadas, we’re devouring another of our favorites: Achiote Wings. These wings have the perfect balance of flavor, color and heat that make it perfect for pairing with your favorite beer (okay okay, living in North Carolina, we’ve been exposed to brew culture so we can recommend a good IPA or smooth Witbier). The total prep time on these babies is enough for you to have a couple beers while you make them, but the end result is enough to, well… have a couple more beers with. Pair these with a good set of friends and a game of dominoes, and you’re really set up well for a good time!
First things first, preheat the oven to 400°F. Then, grab 5 pounds of wings and place into a large bowl.
Remember the Annatto Oil from our previous post? This is the time to whip it out and use it!
Now it is time to toss wings with the annatto oil, salt, pepper, minced garlic and red pepper flakes.
So, here’s our secret to crispy wings: bake them over a wire rack inserted in a sheet pan. This allows the heat to hit at at all angles and lets the fat drip down to the sheet pan.
Insert into the oven at 400°F for 45-50 minutes until wings are crispy. Garnish with your favorite herb (we used cilantro). Serve quickly and enjoy the ballgame!
- 5 pounds of chicken wings, drumettes and flats separated
- 10 cloves of garlic, minced
- Salt and Pepper to taste
- 1/2 Cup Annatto Oil
- 1 tsp red pepper flakes (add more for extra heat)
- Preheat oven to 400°F
- Prepare sheet pans by lining with aluminum foil and inserting wire racks
- Toss 5 pounds of chicken wings with annatto oil, salt, pepper, garlic, and red pepper flakes
- Place wings on the wire racks and put into the oven for 45-50 minutes or until the wings are crispy.
- Serve and Enjoy!
